LaJava began in 2002 with a simple belief:
Great coffee brings people together.
What started as a husband-and-wife venture in Green Bay quickly became something bigger — a local roastery built on craftsmanship, integrity, and community connection. For twenty years, Mark and Catherine Semrau nurtured LaJava into a place where quality mattered and relationships mattered even more.
Today, that legacy continues. Under the new ownership of Dawn and Darin Tuschy plus there partner Michael Byars.
We remain committed to small-batch roasting, ethical sourcing, and serving Northeast Wisconsin with coffee that’s thoughtfully chosen and carefully crafted

We source premium beans from coffee-growing regions around the world, including organic and Fair Trade Certified selections, and roast them right here in Green Bay.
Every batch is handled with intention. Every roast is dialed in for balance, depth, and character.

Crafted in Small Batches
Our Master Roaster produces nearly 1,000 pounds of coffee weekly using our Probat P12 roaster, balancing science, instinct, and experience to bring out the best in every bean.
Small-batch roasting allows us to maintain freshness, consistency, and complexity. It also allows us to stay hands-on, because quality deserves attention.
